奶酪是一種發(fā)酵的牛奶制品,其性質(zhì)與常見的酸牛奶有相似之處,都是通過發(fā)酵過程來制作的,也都含有可以保健的乳酸菌,但是奶酪的濃度比酸奶更高,近似固體食物,營養(yǎng)價值也因此更加豐富。每公斤奶酪制品都是由10公斤的牛奶濃縮而成,含有豐富的蛋白質(zhì)、鈣、脂肪、磷和維生素成分,是純天然的食品。就工藝而言,奶酪是發(fā)酵的牛奶;就營養(yǎng)而言,奶酪是濃縮的牛奶。
