A Japanese company recently released a white crust milk bread that it hopes will curb the practice of removing the crust when making sandwiches.
Did you know that the vast majority of milk bread sandwiches made daily in Japan have their crusts removed? While crusted sandwiches do exist, the general perception is that the fluffy, white part of Japanese shokupan milk bread is tastier than the brown crust. This perception dates back to a time long ago when the crust was harder to chew through, but things are definitely a lot different today. Tokyo Chef Sugimoto and his team at the Imperial Hotel Co., Ltd. spent six months developing an innovative type of bread that they claim eliminates the need to get rid of the crust. People have been coming up with all sorts of ways to recycle bread crusts in order to curb food waste, but Sugimoto’s idea was to create a crust that didn’t have to be discarded in the first place.
Although Imperial Hotel did not fully disclose the secret behind its new white crust bread, it did mention that it is baked slowly at a lower temperature than regular shokupan bread, which results in a white color all through the bread and a more moist texture.
Founded in 1890 by Japanese aristocracy, Imperial Hotel used to serve crustless milk bread sandwiches to its customers, but starting on October 1st of this year, they will be switching to this new white crust bread, thus decreasing its food waste considerably.
The white crust bread will be served in the Imperial Hotel’s restaurants and at banquets, but people will also be able to purchase it from Gargantua Delicatessen, a luxury bakery that has been operating since 1971.

A large analysis looked at hundreds of factors that might influence the risk of heart failure and found one dietary factor in particular that was associated with a lower risk: drinking coffee.
The analysis included extensive, decades-long data from three large health studies with 21,361 participants, and used a method called machine learning that uses computers to find meaningful patterns in large amounts of data.
“Usually, researchers pick things that they suspect would be risk factors for heart failure—smoking, for example—and then look at smokers vs nonsmokers,” said the senior author, Dr. David P. Kao at the University of Colorado. “But machine learning identifies variables(變量)that are predictive of either increased or decreased risk, but that you haven’t necessarily thought of.”
Using this technique, Dr. Kao and his colleagues found 204 variables that were associated with the risk of heart failure. Then they looked at the 41 strongest factors, which included smoking, blood pressure and the consumption of various foods. In all studies, coffee drinking was associated more strongly than any other dietary factor with a decreased long-term risk of heart failure.
Drinking a cup a day or less had zero effect, but two cups a day contributed to a 31 percent reduced risk, and three cups reduced the risk by 29 percent. There were not enough subjects who drank more than three cups daily to know if more coffee would decrease the risk further.
The study was not able to account for different types of coffee or brewing (沖泡)methods, or the use of additives like sugar or cream. Lisa Gautier receives nearly a dozen parcels of human hair every day. With her San-Francisco-based non-profit organization Matter of Trust,Gautier turns donated hair into mats used to soak up oil spills on land,and booms (long tubes)used for spills at sea.
A standard way to clean up oil from land is to use mats made from polypropylene(聚丙烯). But polypropylene is a non-biodegradable plastic,and producing it ultimately means more drilling for oil. Hair,by contrast, is an environmentally friendly resource that can soak up around five times its weight in oil,according to Matter of Trust,and it is abundant.
Oil spills can pollute drinking water, endanger public health,harm plants and wildlife,and damage the economy. According to Gautier,the spills that hit the headlines only make up 5% of global oil pollution.
Megan Murray,an environmental biologist at the University of Technology Sydney, develops sustainable technologies to tackle oil spills. Her research indicates that as well as being biodegradable,human hair is often just as effective as polypropylene,and in some circumstances even better. “The hair mats are very beneficial to land spills,”says Murray but adds that when raw oil is spilled on beach sand,it is very difficult to absorb it using any of the materials she has tested. Another advantage of hair is that it costs less than conventional materials and is “globally accessible as a recycled material,” she says.
However,Murray cautions that hair mats are not a perfect solution,because they are single-use,and can only be dealt with by burning or by burying into soil which then isn’t suitable for growing food. She is now researching methods to extract the oil from a used hair mat,meaning both can be reused.

“Benjamin!” cried Mom from the doorway. I didn’t hear her come in. “What just broke?” she asked, bending to pick up the shards (碎片). In her hands, I recognized the pieces. It was Grandma’s bowl, the one Mom put out for special occasions.
“Why couldn’t you have waited for me to unpack? I couldn’t believe you broke this,” she said.
Words burst from my mouth and spilled across the room. “Well, I can’t believe we have to live here now! I can’t believe I have to switch schools when there are only a few weeks left before summer!” I ran into my room, shutting the door behind me violently.
The broom (掃帚) swept across the kitchen floor. Then the click of Mom’s bedroom door closed behind her. I stole out into the kitchen and picked out the shards in the dustbin. There were so many pieces in here, but maybe I could put them back together.
“I’ m sorry I yelled,” said Mom, as she opened her door. “Please just throw out the pieces. We can’t make a fresh start with broken things.”
As I wandered down the hall, Mr. Sato, my neighbor, was emptying his garbage.
“Are you sure you want to throw that out?” he asked, gesturing towards the bowl.
“It’s broken,” I whispered. “This is all my fault.”
“Things break, Benjamin. That isn’t anyone’s fault. Besides, this is a simple repair. Come. I’ll show you.” Taking a thin knife, Mr. Sato started to repair the bowl. After a long time, Mr. Sato said to me, “This needs to dry. Come back on Saturday, and we will finish it.”
